Marinade with Fermented Dangshen
Ingredients:
- 1 tbsp fermented Dangshen (finely chopped or blended with an immersion blender)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 garlic cloves (pressed)
- 1 tsp honey or maple syrup
- 1 tsp rice vinegar (or apple cider vinegar)
- 1 small piece of ginger (grated, about 1 tsp) – you can also use our fermented ginger
- Freshly ground black pepper to taste
- Optional: 1 tsp chili flakes for some heat

Finely chop the fermented Dangshen or soak it in water and then blend it with an immersion blender. -
Mixing:
Put all ingredients into a small bowl. Whisk well with a whisk or fork until the honey is fully dissolved and everything is evenly combined. -
Let it rest:
Let the marinade sit for at least 15 minutes to allow the flavors to develop. -
Usage:
This marinade is perfect for tofu, chicken, beef, or vegetables. Simply toss the desired food in the marinade and let it marinate for at least 1 hour (or overnight in the fridge).
My tip:
You can enhance the marinade with fresh coriander, lime juice, or some toasted sesame seeds to taste.
